Sorry I haven't posted on this blog forever. Honestly, it just hasn't been a priority... at all :) Sorry about that!
But, here you go, a recipe that is worth repeating. I can't remember if I've put it on this blog, but I don't really care to go investigate, either! So there!! Ha ha.
It's super easy, my kids eat thirds if I let them & it's FAST. A warning for you, though. It's not a set recipe. It's just kind of adapted from "a little of this, a little of that..." Have fun & make it your own if you want to.
Mindee's Meatloaf
Spray or grease a 9x12 casserole dish & preheat oven to 350 before doing everything else. It's best to completely defrost the hamburger, without the use of a microwave, but it still works if you forgot to take it out of the freezer the night before :)
Meatloaf:
1 lb ground beef
2-3 cups of oats
3/4 cup bread crumbs (really, the crumbs, not just chunks of bread :)
some Worcestershire sauce (to taste)
1/4 tsp onion powder
2-3 eggs (2 large OR 3 medium)
• Mix in a bowl, by hand (more like "squish" in a bowl, with your hands!)
-form a loaf out of the meat and place it in the casserole dish to wait for the sauce.
Sauce:
Tomato Sauce
Ketchup
Barbecue sauce
Tiny bit of Mustard
LOTS of Brown sugar
• don't really have set amounts for this, so it's mostly experimental! Just keep tasting it until it tastes like you want it to. I usually have one of the small cans of tomato sauce, a cup & 1/2ish of ketchup, a cup-ish of BBQ sauce, SMALL squirt of mustard & a Holy TON of brown sugar. Probably close to 2 cups!
• Mix the sauce ingredients together with a fast whisking & pour it over the meatloaf.
• The meatloaf should pretty much be drowning in sauce, trust me :)
Bake at 350 for 35-45 minutes, until beef is done.
We like to serve it with a small baked potato & some sweet corn. Have fun!
